Londoners met Nobu Matsuhisa's brand of Japanese precision and South American spice back in 1977. It remains a fashionable and super-cool restaurant, and quality remains high. Seafood sparkles, from sea bass sashimi with dried red miso and yuzu sauce to salmon tartare with wasabi. South America is the inspiration for dishes such as lobster cÚviche with quinoa, and sea bass with red jalape˝o miso. Otherwise there are Japanese staples of sushi and sashimi along with less familiar sea urchin tempura, say, and Wagyu rump tataki with wasabi salsa and tozazu. Desserts are no afterthought, among them a chocolate bento box with green tea ice cream.
