One of Chelsea's more talked-about dining spots, Medlar looks box-fresh, with Lincoln-green banquette seating against mirror panels in one section, leading to a back room done in crisp white with a foliate pattern in thin green tracery on the walls. There's a fresh-feeling atmosphere, which might lead you to expect an ethereal approach to the food, but Joe Mercer Nairne's food has gutsy, earthy substance. He specialises in taking often humble ingredients and less common cuts and subjecting them to treatments that bring out all their intrinsic flavour, in dishes that are easy to understand but still full of commanding potency. Take a starter such as crab raviolo with brown shrimps and samphire on leek fondue in a rich bisque, and then perhaps move on to a winning braised beef cheek with smoked parsley root purée, pickled onions and bacon crumb. Other meats such as duck breast and venison loin have all their innate intensity conjured forth, the latter perhaps paired with rissole, choucroute, beetroot and braised shallot. The dessert list might include pear beignet with warm dipping chocolate and Chantilly cream or a buttermilk pannacotta with poached English rhubarb and pistachios.
