If you're hoofing it from the tube, Medlar is about 20 minutes from either Sloane Square or Fulham Broadway. This has been one of Chelsea's more talked-about dining spots since it opened. The place looks box-fresh, with Lincoln-green banquette seating against mirror panels in one section, leading to a back room done in crisp white with a foliate pattern in thin green tracery on the walls. There's a feeling of spacious freshness, which might lead you to expect an ethereal approach to the food, but Joe Mercer Nairne's food has gutsy, earthy substance. He specialises in taking often humble ingredients and less common cuts and subjecting them to treatments that bring out all their intrinsic flavour, in dishes that are easy to understand but still full of commanding potency. Take a starter serving of thinly sliced breast of lamb, pair it with tempura-battered baby artichokes and dress it with a?oli to create an instant classic. Even a more obvious seafood dish, such as crab raviolo with brown shrimps and samphire on leek fondue in rich bisque has new resonance struck from it. Offal is favoured, winningly so in a main dish of grilled ox tongue with truffled macaroni gratin, cauliflower, walnuts and glazed shallot, while meats such as duck breast and venison loin have all their innate intensity conjured forth, the latter perhaps with a spiced pastilla, carrot and swede crush and hispi cabbage in a belting Cabernet Sauvignon sauce. The dessert list, by contrast, is put together on the principle that old favourites make the best finale: pear frangipane with clotted cream, chocolate marquise with peanut ice cream, cr?me br?l?e.
