Start with classic fish soup with croûtons, rouille and grated gruyère, and progress to pan-fried venison with cauliflower purée, apricot chutney and port sauce, or two might share a grilled leg of Pyrenean milk-fed lamb with flageolet beans and Madeira sauce. Finish with a chocolate and caramel bavarois, or the splendid selection of French cheeses.
