As at its Bishopsgate sibling, the cooking showcases fine Scottish produce, skillfully and accurately handled. A warm salad of roast wood pigeon with oyster mushrooms, Puy lentils and dandelion is a happy blend of flavours, followed by top-quality wild venison haunch fillet partnered with venison haggis, roast chervil root, blackberries, crispy oak moss and game gravy. The Highland theme continues to a finale of Valrhona hot chocolate and whisky fondant with honeycomb ice cream, and whisky and orange gel.
