The Westbury hails from a time when first impressions were not considered to be important. From the outside, it could be an office-block, but inside all is sedate, five-star style. A little way along the ground floor is Alyn Williams' preserve, a serenely relaxing room done in varnished dark wood surfaces with a scintillating carpet and illuminated wine store at one end. The tone of service is both impeccably correct and voluble in its welcome, and it all makes a confidence-inspiring backdrop for the culinary fireworks to come. Williams has trained with the best, but explores his own territory here with a highly personal take on modern European cuisine, using unusual ingredients and techniques for a performance best experienced in the form of the tasting menu that is the only option on weekend evenings, as dishes are taken up from the carte and others make their debut. Evenly caramelised scallops of stunning freshness are dressed with thinly shaved truffle on a flawless spring onion risotto, which might be followed on the carte by tender sirloin of Devon ruby beef with accompanying tartare, potatoes cooked in the dripping, baby turnips and fragrant elderflower gel. For the tasting menu, foraged ingredients such as gutweed and beach greens lend character to the fish dishes, perhaps hake with clams, and marinated quail turns up with violet mustard and a confit egg yolk. Aerated chocolate desserts are a particularly successful party trick, here partnered with mandarin and gingerbread ice cream, while a technically unimpeachable vanilla pannacotta is offset by the bracing sharpnesses of blackberry and limoncello.
