The Victorian building that once provided hydraulic power for Llanelli's docks has been revitalised as an industrial-chic powerhouse on the local gastronomic scene. The 90-foot-high castellated stone tower is a local landmark, which makes it easy enough to find; once inside, the setting is certainly impressive with walls of arched glass windows looking out to sea, Welsh slate floors, and classy bare wooden tables beneath the exposed industrial skeleton of the heritage building. At work inside an open-to-view kitchen, the team at the stoves turns out a French-accented brasserie-style repertoire with a broad appeal and maximum input from local suppliers and producers all over Wales. A signature starter of crab lasagne shows the unfussy style, followed by hearty crowd-pleasers along the lines of breast and confit leg of Barbary duck with Puy lentils and red wine sauce, or braised Brecon venison with red cabbage and celeriac purée. To finish, the Welsh cheeseboard is hard to overlook, otherwise prune and Armagnac parfait makes a grown-up pudding.
