Paul and Anna Webster's cellar bistro is a popular neighbourhood venue, its nooks and crannies and low ceiling providing the place with plenty of character. Simply but smartly dressed tables are the setting for some sound Lancashire cooking along the lines of ham terrine with piccalilli, Bury black pudding with bubble-and-squeak and a poached egg, and Goosnargh chicken with mushroom risotto and gravy. Risottos show up well in the flavour stakes, as is the case with a spring onion and parmesan version that comes with poached sea trout in white wine sauce. To finish, there's classic baked egg custard with orange shortbread and raspberries.
