It feels only right that the Box Tree, one of northern England's destination venues under successive owners since the early 1960s, should be housed in one of Ilkley's oldest buildings. From 1720, it was home to a succession of nearby Denton's gentleman farmers. The famous box trees out front were planted in the late-Victorian era and, after spells as antique shop and tea room, the restaurant of distinction was born. Decorated throughout to a very high standard, it has a particularly attractive lounge, with opulently upholstered furniture and portraits and seascapes on the walls. In November 2014, an extra dining room was opened on the first floor. Simon Gueller maintains the Box Tree's stellar reputation for cutting-edge food that utilises some of the advanced technical means that today's chefs love, but in a style that continues to make sense to aficionados of old-school haute cuisine. Every plate looks artfully composed and is often quite complex, but flavours shine forth, and every last ingredient is given its due. A menu gourmand with dishes culled from the carte is the enviable way to proceed, with four principal courses interspersed with a couple of foamy appetisers - caramelised onion with a gruy?re straw at the outset, cranberry and champagne as pre-dessert. In between may come sturdily constructed duck terrine with warm apricot chutney and pear pur?e, followed by a fish such as sea bass with roast Jerusalem artichoke, confit tomato and pur?ed leek. The main meat business may be Scottish venison loin in tangy Cumberland sauce, garnished with braised red cabbage and roasted sprout leaves, and the finishing line heaves into view with a feather light rhubarb souffl? and vanilla ice cream.
