Will Murgatroyd's passion is for seasonal food with a regional flavour, thus he lists the suppliers on the back of the menu, and serves up food that is British in its heart and soul. That does not mean there are not other influences at play, for the French and Italian preparations much beloved on these shores are present, but the resounding impact is made by the freshness of the ingredients and confident guiding hand in the kitchen. Start perhaps with devilled sprats with tartar sauce, or home-cured duck with hazelnut and rhubarb salad, before fillet of sea bass with pak choi and a lemon and cockle vinaigrette, or perhaps a home-aged rib-eye steak with triple-cooked chips. All this in a former bank not far from Hove's seafront, now a bright and airy restaurant with a relaxed, easy-going vibe. It's also open for breakfast if you fancy some Middlewhite pork sausages or porridge with clotted cream.
