The Holt's main dining area is upstairs: open-plan, with a wooden floor, simple decor, candlelight, and pleasant, efficient service. Food is a serious commitment here and standards are consistently high, with the menu a happy blend of the traditional and more à la mode. Salmon is smoked in-house for a traditional starter with rye toast, or there may be a tart of artichoke, olives and feta. Following on might be well-timed breast and confit leg of duck, served with ultra-crunchy roasties and Savoy cabbage, or smoked haddock rarebit conjured into a main course with champ, celeriac and leeks. Finish with chocolate cloud cake in fudge sauce with preserved berry meringues.
