A traditional restaurant with a creative and modern output. Via a table d'hôte and tasting menu, expect dishes rooted in classical good sense and made with high quality ingredients, but also some cutting edge techniques and bold ideas. Start, perhaps, with the playfully named 'liver, bacon and onion', which is in fact foie gras ganache with jamón Ibérico and various textures of onion. Main courses deliver the same level of refinement: Cartmel Valley venison, say, with sauerkraut, pulses and chocolate, or a fine piece of Isle of Gigha halibut with English samphire, razor clams and chorizo. Finish with 'a taste of chocolate' (tart, powder and crisp) served with iced parsnip.
