Welsh rebel leader Owain Glyn Dwr may be buried in the field alongside this old stone country hotel where the principal restaurant offers unclothed tables and a menu of modern classics. A double act of pork belly and scallop with puréed cauliflower in chicken jus is a well-rendered version of the familiar dish, or there might be potted pulled duck with red onion marmalade and cornichons. Accurately cooked fillet and short rib of Welsh Black beef is served with roast garlic mash and puréed spinach, while hake appears Spanish-style with prawn and chorizo paella and charred fennel. Finish with chocolate fondant, served with salted caramel ice cream and orange jelly.
