A small hamlet of ancient farm buildings, some of which date back to the 15th century, were converted into this Elizabethan house set in 22 acres of idyllic Surrey Hills countryside. Since then, the designers have been let loose to work their magic, and the result is a chic amalgam of ancient beams and vibrant contemporary colours and fabrics, a luxurious spa and a classy restaurant that splits into two chalk-and-cheese rooms - one with cosy oak panelling and an open fireplace, the other light and thoroughly modern with views across the gardens and lake. The eclectic modern cooking takes its cue from the regional larder, serving up the likes of Thai beef with Asian salad and caramelised pecans, followed by rump of lamb with warm Niçoise salad, fried quail's egg and light jus, and pain perdu with spiced roast plums to finish.
