The Anderida Restaurant is the culinary hub of the swish Ashdown Park Hotel and Country Club, an upmarket operation that takes in an 18-hole golf course and a fitness and spa complex in 186 acres of landscaped gardens and parkland hidden in the depths of Ashdown Forest. Be prepared in best bib and tucker for grandeur and old-school formality: a resident pianist tinkles away as amiable staff - who know their way around the intricacies of silver service - deliver flamboyantly-presented classical cuisine, jazzed up here and there with contemporary twists. A typical starter of white onion and truffle tart with a goats' cheese glaze and sage salad could be followed by loin of pork with vanilla and apple purée and sweet potato fondant, or fillet of sea bream with smoked salmon pancake and chicory. Desserts take a classic line - perhaps baked egg custard with vanilla cream.
