If first impressions count, Great Fosters is off to a flying start to winning your heart for the stately-looking property is positively magnificent - copious gables, soaring chimneys, Saxon moat, glorious landscaped gardens and all. With 50 acres to explore including a tennis court, croquet lawn and a heated outdoor pool, the place is achingly English and formal, and it's no surprise to hear it's a big hit on the wedding circuit. When it comes to dining, the intimate Tudor Room is all you might expect in this setting - richly decorated, plush and stylish, with a 17th-century tapestry as a striking feature. Head chef Douglas Balish can call on the estate to provide fresh fruit, vegetables and herbs, and what doesn't come from the grounds is bought with quality in mind. His menus combine a classical sensibility and respect for the ingredients alongside modern cooking techniques and well-measured creativity. Perfectly seared scallops arrive with broccoli purée, crunchy hazelnut and truffle shavings in a well-crafted first course, followed perhaps by 28-day aged beef with a fine sauce, or line-caught sea bass matched with tender chicken and fermented garlic. Among desserts, a dish of chocolate and mango shows technical accomplishment and a touch of showmanship.
