The parquet-floored brasserie room has a light, breezy ambience. Start with a modern classic rendition of scallops, perfectly seared top and bottom, on artichoke purée with grated apple, and sail on to herb-crusted rack of lamb of eloquent flavour, or perhaps halibut with braised leeks and spinach, sauced with cider. At the end, consider a chunk of buttery Bramley apple pie with cinnamon ice cream, or hot treacle sponge pud with butterscotch sauce.
