10 Lady Lawson St, EDINBURGH, EH3 9DS

3 rosettes

Timberyard was built in the 19th century as a warehouse for props and costumes and then became - yes - a timber yard. Some original features remain in the shape of a rough boarded floor and pillars supporting the ceiling, but its restaurant incarnation has brought in high stools at a painted brick bar, a sofa in front of a wood-burning stove, and tartan throws over some of the chairs at wooden-topped tables. Outside is a south-facing courtyard, some of it covered over, with a silver birch and tables and chairs for alfresco dining. The place is run with enthusiasm, energy and great aplomb by five members of the Radford family, with Ben heading up the stoves. He sources his supplies from local artisan producers and foragers, has an in-house smokery and butchery, and grows herbs, flowers, vegetables and fruit on site in raised beds. He also turns his hand to producing exciting, whizz-bang dishes that bear his own individual, highly original hallmark. Sampling one of the Bite, Small or Large dishes is a good way into the style, taking in anything from crab with dill, crème fraîche, fennel and rye, to salmon fillet with brown butter, tarragon, potato and broccoli. Or go mainline with four to six courses at lunch and four to eight at dinner, with bookends of perhaps mackerel fillets with horseradish, buttermilk, cucumber, apple and dill, and apple with sorrel, yogurt and a brioche. Quality raw materials, some rarely encountered, are carefully prepared, and combinations result in zingingly flavourful dishes. Main courses include properly timed halibut fillet with mussels, onion, wild leek, crow garlic (ask one of the staff) and potatoes, and lamb cutlets with celeriac, black garlic, shallots, carrots and kale. There are separate pescatarian and vegetarian menus.
