Stac Polly

Within strolling distance of the Princes Street shops, the unassuming façade of this restaurant hides a sociable warren of richly-furnished and softly-lit rooms. This Edinburgh chain has proved so successful with tourists and locals alike, it now has three branches (the others are in Dublin Street (see entry) and St Mary's Street). Quality Scottish cuisine dominates the menu, with many traditional dishes given a modern twist using local seasonal produce where possible. Try organic fillet of salmon stuffed with lobster mousse, fondant potato with fine beans and red pepper coulis.
