Provençal native Michael Fons left a post at Gidleigh Park, Chagford, to open a restaurant homage to his native region in the Scottish capital. The waterfront venue has a wide-windowed frontage and is stylishly modern, with unclothed tables making a neutral background for the food. Fish soup with rouille and garlic croutons has a reassuring place on the menu, and you might find confit pork belly with rosemary mash and apple and Calvados sauce or stuffed guinea fowl with smoked cauliflower purée among the mains. To finish, there's traditional crème brûlée or Muscat and olive oil cake with poached berries.
