The Ashling is a large, modern and glitzy hotel near Phoenix Park and Dublin Zoo, where Chesterfields Restaurant occupies a spacious, softly lit room with plushly upholstered dining chairs and a busily patterned carpet. The kitchen takes a modern tack with its combinations of flavours and textures, sending out pan-seared wood pigeon with spiced red cabbage, bacon, quince and red wine reduction. Then comes a duo of turbot and langoustine partnered with crab meat bonbons, chargrilled lemon and champagne velouté. Prime native produce is the stock-in-trade, so Irish farmhouse cheeses bring up the rear alongside puddings such as chocolate and Baileys bavarois with Amaretto cream.
