Conceived in the 18th century, Rockliffe began to take on a distinguished air at the onset of the Victorian era when the Surtees family, who were historians and landscape painters, acquired it. It lives up to its history by offering the full country-house deal, including state-of-the-art spa facilities and golf. The principal dining room, The Orangery, inhabits the original Old Hall, and is an eye-popping space replete with vaulted rafters and slender gilded pillars. Richard Allen strides into this glittering ambience with Vegetarian, Pescetarian, Tasting and Surprise menu options to the structured four-course carte. Somewhere along the way, you may encounter smoked fillet, parfait and tartare of sea-trout with an oyster, roasted cucumber seeds and dill, or crab in Bloody Mary livery, colour-bombed with avocado and radish. Main courses look to offer variant cuts in the meat dishes - best end and casseroled leg of lamb, braised cheek and crispy belly of pork - or perhaps an eastern spin such as turbot with Asian shrimp risotto, cashews and kaffir lime. Then wander back through the annals of English domestic cookery for desserts like rhubarb with junket, milk sorbet and a doughnut, or down to the Med for pistachio and olive oil cake with chocolate and orange accompaniments.
