This converted silk mill by the River Derwent is the setting for some bright, modern cooking making good use of regional produce. Nori-wrapped Loch Duart salmon is a thoroughly contemporary way to start a meal, with crispy squid, ginger and soy, while another first course has fun with goats' cheese and pineapple. Main course fillet of Derbyshire beef with layers of potato and mushrooms and a shallot purée shows respect for classical ways. Another main course combines sustainable Icelandic cod with smoked bacon polenta and clam sauce, and, when it comes to dessert, there's creativity on show in a mini lemon cake with Swiss meringue and red berry lollipop parfait.
