The white Georgian hotel is in a picturesque village a few miles out of Carlisle, close to Hadrian's Wall. Its Conservatory restaurant overlooks the landscaped gardens, and has a striking raftered ceiling and red quarry tiles on the floor. The kitchen favours a largely modern British approach, giving dishes their own distinctive identity. Twice-baked goats' cheese soufflé comes tricked out with balsamic red onions, pomegranate seeds and pickled walnuts. Comforting ways with main courses include baked cod with Morecambe Bay shrimps, buttered kale and parsleyed mash, and for pudding, look no further than flawlessly caramelised tarte Tatin with vanilla ice cream.
