Bully's is a busy-looking restaurant, virtually every inch of its walls covered with pictures, mirrors and other paraphernalia, and Russell Bullimore tirelessly adds and changes things. The kitchen relies on Welsh providers for its materials and devises menus that show a clear grounding in the French repertoire while pulling in ideas from near and far. Timing is ever well judged, seen in starters of seared scallops fragrant with vanilla essence, accompanied by Puy lentils and fine beans, and pan-fried foie gras cut by caramelised pineapple. Sauces are well considered: a glossy one of marjoram for a main course of pink rump of lamb with rainbow chard, creamed leeks and saut?ed potatoes, one of peanuts and star anise for succulent pork tenderloin with pak choi and Parmentier potatoes. Puddings are worth a punt too, among them crisp-based mango tarte Tatin with peach and vanilla ice cream, and canonical honey and orange cr?me br?l?e.
