Built in the mid-19th century as a large private house, this early Victorian Gothic pile has been a hotel since 1927. Although a second restaurant is mooted, diners currently eat in The Fountain Restaurant, whose modern British menu likes to declare Garden of England provenance in dishes such as duo of Romney Marsh lamb with dauphinoise potatoes, pea purée, and apple and mint relish, Alkham Valley Old Spot pork belly with soy and ginger marinade, and from an Orpington (which used to be in Kent) farm, seasonal vegetable platter dressed with extra-virgin Kentish rapeseed oil. The homemade breads are excellent. Finish with salted caramel and milk chocolate parfait.
