The Pump House

Merchants Road, Hotwells, BRISTOL, BS8 4PZ

2 rosettes

Chef-proprietor Toby Gritten has made great use of the hydraulic pumping station down on the waterside to create a buzzy gastro-pub and restaurant. Gritten likes to champion local produce, including foraged materials, and everything from bread to chutneys is made in-house. Depending on the season, you might start with seared Bath chap with apple, celeriac and a fried quail's egg, or game terrine with forced rhubarb and chicory. Main-course venison steak with root vegetables and smoked bone marrow is one way to go, but there's also the likes of roast gurnard with walnuts, parsley and brown shrimps. End with lemon croquette, kaffir lime leaves and sorbet, and toasted marshmallow.
