A once run-down corner pub in Kemp Town village has been given a makeover, with clean white walls and bright pink banquettes in the main dining area. Begin with a pairing of seared squid and breadcrumbed pig's trotter in smoked paprika pesto to get the taste buds fired up, or perhaps a bowl of velvety celeriac soup with truffled croûtons and a splash of Muscat vinegar. Main courses are earthy and filling, so expect a chickpea and aubergine stew under roast hake, or roast lamb rump with a sugared pastilla, rainbow chard, giant couscous and pomegranate. To finish, go for cherry clafoutis with almond cream and cherry sorbet, scented with meadowsweet.
