The throbbing purple frontage gives notice of the vibrant approach to trendsetting vegetarian cooking on which Terre à Terre embarked in the 1990s. In an expansive room that opens out to a small terrace at the back, the menu specifications are at least as voluminous as the surroundings. A streak of Brighton irony runs through it all: Eats Beets and Cheese involves buckwheat potato crumble and sheep's milk ricotta, soused honey carrots, sherry shallot purée and much more. The rhyming dictionary is mined for mains such as easy-peasy calabrese, and better batter with lemony Yemeni relish. Aubergine dengaku bakes its prime ingredient in sake, before throwing a welter of other Japanese seasonings at it - white miso, wasabi, yuzu, the lot. With such an adventurous menu, the food may occasionally fall a little short of the expectations raised, but you can't go far wrong closing on a booze-shotted affogato.
