For a fish restaurant, the setting is pure gold: it's virtually on the beach, with a sunny terrace even closer to the waves. The full-length glass frontage makes the most of the views, throwing plenty of light into the restaurant whatever the Dorset weather throws your way. It is a bright, modern space of stripped-out beachcomber-chic pastel shades and bleached wood, dealing in spanking fresh seafood simply cooked along modern lines by the chefs beavering away in the open-to-view kitchen. You might set out with roast Portland scallops with carrot purée, pickled raisins and coriander cress, then go for wild sea bass matched creatively with rosemary polenta, chestnut purée, cavolo nero, mushroom duxelles and red wine shallot jus. There are meat dishes if you must - confit pork belly with cabbage and bacon, hash brown, poached apples and Calvados jus, say - and for dessert, perhaps Eton Mess and pannacotta.
