Set in one of north Cornwall's most popular fishing villages, this 16th-century coaching inn sustained serious damage during the infamous Boscastle floods in 2004. Five years on - and with a little help from the BBC's 'Changing Rooms' team - it boasts a chic modern dining room, The Waterloo Restaurant, that's popular with locals and tourists alike. The menu changes daily and features imaginative dishes conjured from quality local produce: roast pork loin with carrot purée, rösti potato and cider jus perhaps, or roast duck suprême with braised red cabbage, roast parsnip purée and cranberry jus. Booking is essential as tables are limited, but if you're out of luck try the hotel bar - a friendly, beamed affair with a real log fire and a nice line in local specialities such as mackerel and eel.
