A mere few years is all it has taken to resurrect this simple white-painted clapboard coaching inn and transform it into one of East Sussex's foodie hotspots. The clean-cut décor would not look out of place in a chic urban venue, while cow motif wallpaper, antler coat hooks and stag's head mirrors serve as a playful reminder that you're out in the sticks. The vibe is suitably easygoing, helped along by a service team who are well-briefed on the innermost workings of the menu - they need to be, since it merely lists the components of each dish rather than giving any elucidation as to what has actually been done to them. Local produce drives the output, including foraged herbs and mushrooms, while line-caught fish travels a short way from the south coast. The result is clever, of-the-moment, technically accomplished food: wood pigeon carpaccio with truffle custard, salt-baked artichoke and Madeira to get things going, followed by rump of Romney Marsh lamb teamed with grilled little gem lettuce, crispy lamb bacon and a dollop of sour cream. Finish with strawberry shortcake with buttermilk custard.
