Standing at the edge of the Blakeney National Nature Reserve in coastal north Norfolk, Morston is a 17th-century country seat with commanding views of the briny. Inside, all is heightened elegance, the conservatory dining room done in delicate vernal green with fresh flowers abounding. Polished service ensures the evening drill runs like a well-oiled engine. Guests gather at sevenish for drinks, then take their seats for the eight o'clock show that is the seven-course tasting menu. Following an appetiser, a soup appears, perhaps silky potato velouté enriched with parmesan, black truffle and basil oil, before a miso-glazed chicken wing arrives with a confit egg yolk. A vegetable course might offer roasted cauliflower in onion broth, ahead of a fish - monkfish roasted on the bone in ras el hanout and raspberry vinegar - and the main meat, maybe guinea-fowl with smoked potato mousse, baby leeks and trompettes. A pre-dessert, yogurt sorbet with green tea and lime mousse, heralds the final flourish, perhaps glazed passionfruit tart and mango sorbet. Wonderful home-made breads and a trolley of fine cheeses add authority to the occasion, and the pre-selected wine flight is worth signing up for, with imaginative pairings of unlikely stars from Croatia and Tasmania.
