At the end of a tree-lined drive is this Victorian country-house hotel in well-maintained gardens with the River Conwy flowing idyllically past. In the kitchen, Welsh ingredients are proudly turned into dishes that strive to be uncomplicated and to use the best of what's in season (much of the produce comes from the kitchen garden). Modern British in the broadest sense, with plenty of influences from Europe, dishes might include Ynys Mon pigeon burger with a pickled beetroot salad, followed by grilled fillet of Conwy plaice mornay with parsley mash and caper butter. Finish with Welsh goats' cheese and lemon cheesecake with a shortbread biscuit and Chantilly cream.
