The Pheasant

BASSENTHWAITE, Cockermouth, CA13 9YE

1 rosettes

Dating from the 17th century, this long, low-slung building has a charming, atmospheric bar and a beamed bistro as well as the more formal Fell restaurant. The kitchen relies on local sources for its ingredients and, while its roots may lie in the great classical techniques and repertoire, it keeps a finger on the contemporary pulse. Start with twice-baked Swiss cheese soufflé, leek velouté and parmesan, as a prelude to tender Gressingham duck breast in port and cherry jus with granola, parsnip and beetroot. A trip down Memory Lane at dessert turns up a reworking of sponge-and-ice-cream Arctic roll made with pistachios and griottines.
