Audleys Wood Hotel

This striking Victorian property stands in seven acres of grounds and woodland and has all the trappings of a luxury country-house hotel. The main restaurant is the grand Simonds Room, its panelled walls hung with framed tapestries against ornate carved oak cornicing. A classical vein runs through the menu of otherwise modern British ideas. Beef fillet comes with roasted shallots and fondant potato, but also oxtail and beetroot cannelloni. Starters include an up-to-the-minute dish of Stilton brûlée with pear, frozen grapes and pecans. The same ingenious balance is seen in an elaboration of strawberries and cream, served with scarlet compôte, pink peppercorn ice cream and biscotti crumbs.
