Within 90 acres of parkland in the Vale of Aylesbury, Hartwell House is a majestic property with enough pomp to have served as home to an exiled claimant to the French throne (Louis XVIII, no less). Seafood normally crops up among well-constructed starters - perhaps pan-fried fillet of red mullet with chorizo and cannellini bean cassoulet and creamed leeks. Everything looks good on the plate and flavours are nicely handled. Main-course slowly-braised ox cheek bourguignon with Savoy cabbage, winter vegetables, delmonico potatoes and braising juices, is a real seasonal warmer, while the estate's orchard and hives are behind apple mousse with honeycomb, apple jelly and cinnamon ice cream.
