The Yorkshire Dales extend gloriously all around the characterful stone house, where a vigorous rendition of British modernism is the stock-in-trade, with overlays of various Mediterranean traditions. A white-truffled pumpkin and chestnut risotto is one way to start, or there might be salmon three ways - tartare, herbed ballotine and a gravad lax spin cured in beetroot, vodka and dill - garnished with Keta caviar. Pedigree meats for main include braised herb-stuffed shoulder of Old Spots pork with dauphinoise and roasted vegetables in sweet tomato sauce, while fish might be baked halibut in lemon and caper butter. Finish with properly rich sticky toffee pudding and vanilla ice cream.
