The Traddock

Settle, AUSTWICK, LA2 8BY

2 rosettes

This gentleman's residence was built for a member of the influential Ingilby family in the 1700s and is perfectly placed for striding out into the Yorkshire Dales National Park straight from the doorstep. So, no excuse, then, for not coming to the table with a keen appetite. After an invigorating yomp - along Wainwright's route to Crummackdale, perhaps - an aperitif by a crackling real fire in one of the antique-filled Georgian or Victorian lounges will set you up for the kitchen's imaginative line in modern British dishes. Organic, seasonal and local ingredients are treated with due respect here, and brought together in well-considered combinations - rolled saddle of rabbit comes with crisp ham and fennel and pistachio stuffing, pointed up with peach chutney; next up, rack of lamb melts in the mouth, and is teamed with creamy dauphinoise potatoes, green beans and a redcurrant and Rioja reduction. To finish, the crunch of hazelnut brittle adds an extra textural dimension to dark chocolate mousse with hot caramel sauce>

Cosy interior. First course, belly of pork, was excellent. Main course - the halibut was good but the rack of lamb was overcooked and tough. Pudding and cheeses - nice but nothing special. The service fell short of our expectations - it was generally poor and, at times, bordered on impolite. Good selection of wines but initially they forgot to take our wine order and then brought out the wrong bottle. Overall, the poor service clouded the evening.
