With its vast grounds and immaculate gardens, Eastwell is very much the manorial pile, full of magnificent, well-appointed interiors. There is no automatic allegiance to traditional British ways in the cooking, however. So a sturdily constructed terrine of ham hock and foie gras, accompanied by pickled veg and truffled mayonnaise might be followed by a roasted fillet of stone bass that comes on vegetable stir-fry with pak choi and Thai-spiced purée or braised rump of Romney Marsh lamb with wild garlic, smoked yogurt and pine nuts in tapenade jus. A fixed-price menu offers simpler dishes, while desserts aim to seduce with chocolate fondant with malted milk and brandy ice cream.
