This creeper-clad country house where the author of The Compleat Angler used to stay when he fished in the River Dove (hence the name) has glorious views over the Dovedale Valley and the Derbyshire peaks. Decorated in rich hues of red and gold, the elegant Haddon Restaurant favours a traditional candlelight-and-linen look, contrasting with the up-to-date creative menu. Home-cured gravlax with crab pâté and avocado purée opens the show, followed by a duo of rabbit loin and crispy croquette matched with garlic and rosemary-infused fondant potato, wilted spinach and crispy pancetta jus. End with lime posset and macaroon with chocolate crackling and soil.
