Bluebells certainly stands out from the crowd with its sleek modern looks and upbeat, buzzy ambience. Shimmery voile curtains divide up a long dining room done out with stylish dark wood tables and chairs upholstered with pearl-white panels. The kitchen works a modern British groove, delivering labour-intensive dishes with multi-layered flavours, brought thoughtfully together with skill and a good eye for presentation. That old stager, chicken liver parfait, gets a kick from cubes of red Muscadet wine jelly, quince chutney, poached pear and toasted hazelnuts, while goats' cheese nuggets and sesame and Parmesan shortbread might add value to smoked Jerusalem artichoke velouté. Meticulously sourced ingredients are a hallmark of a main course partnering Blythburgh pork tenderloin with crispy pig's head, wilted kale, roasted garlic foam and potato fritters. Or you might opt for fish, in a take on cassoulet uniting monkfish with mussels, white beans, chorizo and saffron. Service remains expert, meticulous and relaxed all the way through to a finale of vanilla and praline crème brûlée with chestnut ice cream and vanilla macaroons.
