An elegant country house in handsome grounds (including kitchen garden and orchard) with a relaxing dining room patrolled by friendly staff, and menus with a real sense of creative elan. Begin with soused mackerel, compressed cucumber, avocado mousse and Avruga caviar, or honey roasted parsnip velouté with pear and candied walnuts, followed by steamed cod, apple and potato puree, samphire aïoli and celeriac espuma, or a meat dish of smoked duck, garlic soup, aubergine, fennel confit and salsify emulsion. For dessert an up-to-the-minute Earl grey and lavender crème brûlée with pistachio brittle and mullet wine sorbet might appeal.
