This smart restaurant with rooms is a place of enormous charm, its intimate dining room brought into the 21st century with high-backed black chairs, wooden floors and mirrors with funky striped frames. The kitchen takes the best of Sussex produce as the foundation for a menu of simple bistro dishes. Seared pigeon breast with pearl barley and wild garlic risotto is a faultlessly-executed starter, followed by roasted venison fillet with spinach, button mushrooms, baby onions, crisp roast potatoes and bacon jus. It's all presented with aplomb, and a dessert of pannacotta with poached rhubarb and a sablé biscuit brings the curtain down on a high note.
