The Brighton-based Ginger group of restaurants and refashioned pubs has given its country bolt-hole a stripped-down look with slate floors, chunky tables and wood-burners plus a beer-garden and raised beds where the Fox's own vegetables are grown. The menu mixes English staples with modern European thinking, producing a rabbit Scotch egg with a delicious warm and runny quail egg to start. For main, a perfectly cooked breast of guinea fowl with a light and fluffy boudin will certainly appeal as might the poached rhubarb with white chocolate, fennel ice cream and meringue and rhubarb macaroons to boot.
