A handsome Victorian mansion hotel in the Sussex countryside where a starter of crabmeat comes with roasted beetroot, clementine and watercress, while main courses offer some offbeat accompaniments to their central components. Loin and breast of lamb are partnered by salsify and spiced lentils in a striking passionfruit sauce, while stone bass arrives on a fatty jus gras with celeriac, romanesco and a carrot and coconut purée. Things settle a little for desserts such as plum Bakewell with marzipan ice cream, or classic Tatin for two, but cheese comes as a 'creation', perhaps a portion of Tunworth in a gougère with beetroot, manuka honey and fennel.
