The 16th-century building in a pedestrianised street in the heart of old Horsham looks pretty historic, but chef-patron Tristan Mason's food is certainly of-the-moment stuff. Within, the setting blends ancient and modern elements with great effect: a striking beamed vaulted ceiling, wall timbers and bare floorboards sit alongside a contemporary décor. As is often the way with this kind of innovative, creative, technically skilful cooking, menus dispense with any description other than listing the components of each composition, but whether you go for three, four, six or eight courses, you can be sure that the full gamut of taste categories, textural contrasts and temperatures will be brought into play. Clever stuff, then, but this isn't just about techno flim-flam: having trained with Marco Pierre White, Mason's ideas are solidly grounded in classic French technique. An impressive, highly-detailed starter might see scallop paired with beef daube, parsley root and truffle. Fish and meat combinations are favoured, beautifully cooked and might explore the textures and flavours of lamb, kid and goat, while partridge could arrive alongside quince and bacon. Things are brought to a close with tour de force desserts involving, perhaps, a coconut soufflé helped along by passionfruit, lemongrass and Thai basil.
