Built on the eve of the Civil War, Nailcote is a stately home on a modest scale, with 15 acres of grounds containing what are reputedly some of England's oldest yew trees. Old-school service extends to tableside steak-flambéing, but otherwise the mood is modern, for contemporary classics such as scallops with puréed roasted cauliflower and Clonakilty black pudding, and appealing main dishes such as Gressingham duck breast with pak choi, sauce bigarade and an underlay of crunchy barley, or herb-crusted sea bass with red pepper and creamed leeks. For dessert, rhubarb and custard is reimagined as a parfait, topped with tangy apricot and ginger sorbet.
