A hotel and conference centre next to the Jubilee hospital, the Golden Jubilee Conference Hotel is a multi-purpose hub for business meetings, fitness workouts and aspirational dining. A newish spin on a modern classic produces a trio of scallops with crisp pancetta and three matching pyramids of a rather salty cauliflower pannacotta amid the terrines and ballotines of the starter listing. The main event might be pork loin poached in sage butter alongside garlicky mash and apple purée in raisin-dotted jus, or cod with sautéed potatoes and confit fennel. Ecclefechan tart with toffee ice cream is a fine regional speciality, or there may be three variations on apple - Tatin, pannacotta and sorbet.
