The Belfry resort has more than 300 bedrooms, a nightclub and four eating places, including its signature restaurant, the large and lively, three-roomed Ryder Grill. Diners can enjoy views across the famous Brabazon golf course, and in summer relax on its outdoor terrace. Steaks, chargrills and spit-roasts, fish and lobster are the stock in trade. A starter of nicely caramelised grilled scallops served with braised lentils, smoked bacon and apple and celeriac salad makes an ideal prelude to roasted loin of venison with dauphinoise potatoes, braised Savoy cabbage and blackberry jus. Cleanse the palate with apple and cinnamon delice with poached apples and cider yogurt sorbet.
