A charming Georgian mansion, Fairyhill is in a secluded position within 24 acres. The smart restaurant makes excellent use of local produce and delivers a refined experience that isn't in the least stuffy. The modern British cooking may start with duck liver parfait with pear and apple chutney, or smoked haddock beignets with hazelnut and citrus salad, ahead of chicken ballotine with chard (from the kitchen garden), rösti and tarragon sauce, or fillet of sea bass with laverbread sauce, broccoli and baby potatoes. Puddings can be as familiar as spotted dick and as novel as green tea pannacotta with hibiscus sorbet and poached rhubarb.
