Hiding in woodland near Ipswich, this sparkling-white boutique hotel has verandah seating out front. Once inside the Brasserie dining room with its open kitchen and plain wooden tables, you write down your food order and take it to the bar for service. An extensive menu of global modernism kicks off with the likes of Wagyu carpaccio with pickled kohlrabi and truffled crème fraîche. Spot-on timing elevates a main course of wild salmon with samphire, asparagus and broad beans into the big league, or there may be guinea fowl in tomato consommé with Savoy cabbage and pancetta crisps. Go trad for afters with apple and sultana crumble and vanilla ice cream.
